I only noticed this the other day for the first time, but it may have been doing the same thing since new. When I turn the ignition on with the bike in gear the temp gauge needle moves straight to high and stays there. When I knock it out of gear or start it it is all ok. I'm just wondering if this is normal.

I think the start up process is incomplete whilst in gear...you will have a check showing in the GP indicator....well I do when I do that.

Yes it's normal.....as I found out on a 36 degree day at the shops thinking my new Busa had overheated.
Waited 2 hours in a stinking hot car park only to figure out....the temp gauge goes straight to red with key on.
