Can someone explain to me which part is the headstem? is it that part that the bars attatch to or the steel tube that the head nut attatches to

I always thought that the triple tree bolt was the headstem bolt, and the tube of frame it go's through was the actual headstem myself.

the head stem is the third part of the triple tree. the other 2 being the fork legs

Ie: the part that goes through the head stock.

so its not the top clamp that has "hayabusa" written on it?

no
that would be the handlebar holder.
under that is the top tripple tree
then the headstock part of the frame.
under that is the bottom tripple tree.

head stem joins the two trees.

big nut in the middle of "top clamp that has "hayabusa" written on it"
is the very top of the head stem
