I use silver bait.

Fairly easy to use and seldom fails - go to fish and chip shop, hand over bait, pick out fish.

for surf - I live inland so my surf rod and reel are a home for spiders.
10 ft rod, heavy sinkers, depending on sets, I put sinker at end of line, 2x hooks
