I would also suggest a thorough check of all electrical connectors. Specially the ECU, injectors, ignition, fuel pump and around the instruments. It might be that some vibration (like snapping the throttle) cause break of continuity on a loose connector. Specially that you have replaced all the wiring. Are all the looms routed correctly? They might be some rubing through the insulation and shorting. And finally check if all the fuses are fully in their nests. Cheers
