Hey Need,
If you're looking to do a 1 off, I bought a set of oxford soft paniers that have velcro straps that hook up under the pillion seat/hump. holds about 30-45lts in the pair (expandable) and only about $100. you will need to run duct tape on the tail under them to save your paint but all comes off no worry. Keep your CoG lower than a rack also. My wife and I run both racks and panniers when we go on longer trips.
